ENJOYMENT
Pale yellow colour with green highlights. The vivid tropical aromas and green freshness of a typical Sauvignon Blanc are enriched by the character of Mediterranean fruit contributed by the Roditis. In the mouth, the fine structure created by this successful pairing supports an intensity of flavour balanced by cool crispness, melting into a long-lasting aromatic finish.
Fresh green salads, seafood, steamed or grilled fish, grilled chicken or turkey, manouri cheese and fresh goat cheeses, also perfect as an aperitif.

2016 was one of the earliest vintages for the Sauvignon Blanc, considering that the grapes were harvested up to 18 days earlier compared to the previous year. Particularly with regard to the Kavala vineyard, the green aromas, the high acidity levels of the R3 clone and the night harvest at ambient temperatures below 10oC, which we applied for the first time, contributed to one of the best harvests of recent years
The two varieties are harvested and vinified separately. Prior to fermentation, which takes place in stainless steel tanks, pre-fermentation maceration is applied with the aim of creating a wine with intense varietal aromas.
