A milestone in a millennial history
On Saturday, the 19th of May, an interdisciplinary symposium for retsina was held and organized by KECHRIS winery at the premises of the company in Kalochori, Thessaloniki. For the first time, scientists from different fields shared their knowledge and opinions regarding the use of resin on vinification and shed light on unknown aspects of the production of the oldest wine in the world.
Running over a period, which ranges from the prehistoric times to nowadays, through studies, experimental research and testimonies related to the grapes and resin relationship over the time, in fields like history, archeology, folklore, literature and chemistry, hundreds of people that attended the symposium or watched it online, had the possibility to decode the secrets and discover the potential, of one of the most emblematic products of our gastronomic civilization.
The symposium closed with a feast, a gastronomic festival with live cooking and traditional food from selected companies from Thessaloniki that highlighted the inextricable bond between retsina and food through the creation of countless flavor combinations
